Coated peanuts

INGREDIENTS

  • 6 cups raw groundnut
  • 6 eggs
  • 6 cups flour
  • 1 cup of sugar
  • Pinch of Nutmeg (optional)
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 1/3 cup powdered milk
  • 1/2 teaspoon of vanilla flavor
  • Vegetable oil (for frying)

STEPS

  1. In a bowl whisk together the eggs, sugar, vanilla extract salt and mix to combine
  2. Pick the groundnut to get rid of the bad/spoilt ones
  3. Blanch the already picked groundnut for 2-3 minutes
  4. Sieve out and let dry completely
  5. Mix flour, milk powder, nutmeg, and baking powder in a bowl and set aside
  6.  In a large bowl, pour the dried groundnut, take a tablespoon  of egg mixture, pour it over the groundnut and shake in a circular motion
  7. Once incorporated, sprinkle a handful of flour mixture and shake in a circular motion too
  8. While doing that always separate the ones gumming themselves
  9. Continue the above process till the ingredients are finished
  10. Heat the oil in a pan and fry on medium heat till golden brown Store in an airtight container and enjoy
